Noodles with Peppers and Tofu

Cook the rice noodles as instructed in the instructions. Generally they don't take a lot of time to cook. We had them ready in about 4 minutes, so keep an eye on them!

Cut the peppers and the onion into strips. Drain the tofu well of its excess liquid and shred it.

Drizzle some olive oil into a large pan and once it is hot add the slices of pepper, onion, and shredded tofu. Also add the grated ginger. Cook on medium heat for 7-8 minutes.

When the vegetables are cooked and crispy add the soy sauce and mix. Next, add the cooked noodles and stir well. Serve and enjoy!
Tips & Tricks
You can finish this dish by adding a handful of peanuts to the pan.
You can add a tablespoon of oyster sauce and another of soy sauce instead of only adding soy sauce.
