Preheat the oven to 400ºF.

Start preparing the vegetables. Wash the zucchini and slice into medium thick slices. Peel and slice the carrots. Slice the red bell pepper into strips.

Place the vegetables into an oven-safe dish, add some olive oil on top, a pinch of salt and pepper, and bake for 15 minutes. Once this time has passed remove the vegetables from the oven and let them cool a bit.

While the vegetables are roasting cook the pasta in a pot with boiling water for the time indicated in the instructions. After this time, drain, and let cool.

Place the pasta into the salad bowl followed by the roasted vegetables, some crumbled feta cheese and then mix. Add the halved cherry tomatoes on top and dress the salad with oil, salt, and lemon juice.
