Instructions

Heat a little olive oil in a pan or skillet. Then lightly fry the minced onion, over low heat until soft.

Peel and cut the potatoes into small chunks. Wash and cut the broccoli into florets.

Bring a pot of water to the boil. Then add the potatoes and a pinch of salt. When the potatoes are tender (10–15 minutes depending on the size of the chunks), remove from the pan, drain, and set aside for later.

Add the broccoli to the same water and cook for 4–5 minutes. Then drain.

Combine the cooked potatoes and broccoli in a bowl, mash with a fork, and mix.

Add the onion and the eggs to the mixture, and mix to incorporate. Refrigerate for a short while to cook and firm up the mixture.

Take the bowl out of the fridge and use your hands to shape the mixture into nuggets. Dredge in breadcrumbs and set aside.

Heat the oil in a skillet and fry the nuggets.
