Pumpkin and Spinach Burritos

Finely chop the pumpkin into really small dice and slice the onion.

Add some olive oil into a pan. When it's hot add the pumpkin and the sliced onion. Cook over medium heat for 6-8 minutes.

After this time add the washed spinach (if the leaves are large, cut them into smaller pieces before adding to the pan) and sauté for 2-3 minutes with the other vegetables. Add a pinch of salt.

Warm the tortillas in another pan and fill them with the vegetables you have just prepared.
