Peel the carrots, pumpkin, and potato. Dice these ingredients into small cubes. Chop the onion.

Add a drizzle of olive oil to a pot. When the oil heats up, add the onion and lightly fry for 2-3 minutes over medium heat. Taking care not to burn the onion.

Add the carrots and pumpkin, and cook for 10 minutes, until it is tender.

Add the potato and cover everything with water. 3 cups of water will suffice. Add salt and almost cover completely with the lid (leave a slight opening) and cook for 20 minutes. The vegetables should be tender.

Once the vegetables are properly cooked, add them to your blender and blend very well. Serve in your bowls.
