Pumpkin Pancakes

Instructions

Place the pumpkin on a cutting board and cut into smaller pieces. Pour water into a pot and put it to boil. Once boiling add the pumpkin and cook. In about 5-7 minutes they should be ready. Drain and place on a plate. Use a fork to mash until you are left with a puree. Set aside for later.

Add the beaten egg, the milk, honey, and pumpkin puree into a deep bowl. Mix using a hand mixer.

Mix the flour and yeast in another bowl and then add those dry ingredients into the bowl with the liquid ingredients. Use the hand mixer to mix again.

Grease a skillet or pan and place some of the batter into it. Let it disperse and take the shape of a round pancake.

When you see that the batter is cooked on one side (little bubbles will begin to form on the top), flip the pancake using a spatula and cook the other side. Repeat these steps until you have finished the batter.
Tips & Tricks
Do you have pumpkin spice at home? If so, add a teaspoon to give these pancakes an extra special touch of flavor.
Place several pancakes on the plate, add your favorite fruits and sprinkle some honey or agave syrup on top.
