
Quinoa and Mango Salad

Instructions

Rinse the quinoa under water. Boil approximately 2 cups of water in a pot. When it begins to boil add the quinoa, pinch of salt, and cook for about 20 minutes or until the seeds open. Once ready, remove from the heat, drain, and let it cool.

Prepare the rest of the ingredients. Wash, peel, and dice the mango. Chop the avocado and tomato. Dice the onion and cilantro.

Place the cooked quinoa into the salad bowl and follow it with the previously drained beans. Next, add the vegetables you've just chopped and gently mix.

Dress the salad with oil, juice from 1/2 lime, and a pinch of salt.
