Preheat the oven to 375°F.

Wash and cut the eggplants in half lengthwise. Place on a baking sheet with the peel facing upwards and bake for 35 minutes. After this time, remove and let it cool.

Remove the flesh and place together with the other ingredients in a blender or food processor and blend until you achieve a creamy texture.
