Salmon and Spinach Nuggets

Preheat the oven to 400°F.

Lay the salmon fillets on an ovenproof dish. Sprinkle with a little salt and drizzle the flesh with a little oil. Bake in the oven for 15 minutes. Then take out. Remove the skin and cut into pieces.

While the salmon is cooking, mince the garlic and onion. Wash and cut the spinach leaves into strips.

Heat a little olive oil in a skillet. Add the minced garlic and onion and fry over low heat for a few minutes, stirring often.

When the onion has softened, add the chopped spinach and fry for a couple of minutes, continuing to stir from time to time. Season with a pinch of salt.

Soak the bread in a bowl with the milk until soft.

In your blender or food processor, combine the salmon, fried spinach and onion, and bread soaked in milk. Pulse a few times so all the ingredients combine and you have a mixture that is easy to shape. Don’t overdo it; the idea is to create a crumbly mixture rather than a paste. Use your hands to shape the mixture into nuggets.

Place nuggets in a little flour to dredge them and fry in a skillet with a little olive oil.
Tips & Tricks
You can also bake the nuggets instead of frying them. Just put in the oven at 400ºF and bake for 20–30 minutes, until golden.
Why not serve these nuggets with a delicious yogurt dressing? In a bowl, combine the unsweetened plain yogurt, 1 minced garlic clove, a little salt and pepper, and several tablespoons of lemon juice. Mix well. Your dressing is now ready.
We served the nuggets with fresh pasta salad. The combination was just perfect.
