Spaghetti with Creamy Cheese Sauce

Bring 4 cups water to a boil and add 1 teaspoon salt. Add the spaghetti and cook for the time shown on the package (about 7 minutes).

Put 1 tablespoon oil into a skillet and place over medium heat. Add the minced garlic. Fry until lightly colored, stirring constantly.

Then add the light cream and heat well, then add the grated cheese. Mix until the cheese melts.

Before the spaghetti finishes cooking, take 1/2 a cup of the cooking water and add to the cheese mixture in the skillet. Cook for 2 more minutes.

Then mix in the minced parsley, salt, and pepper. Stir the sauce. Drain the spaghetti and pour over the sauce. Mix thoroughly and serve.
Tips & Tricks
Aged cheese goes amazingly well with this recipe, although you can always stick to your favorite cheese.
The cooking water is added to make the sauce lighter. Don’t use any other water. Because the cooking water is enriched with starch from the pasta, it makes sauces lighter but still consistent.
