First, wash the spinach and slice. Peel the garlic cloves.

Next, add oil to a pan and when it's hot start to fry the garlic cloves until they begin to brown. Then add the spinach and cook over medium heat for 5-6 minutes. While the spinach is cooking you can begin to beat the eggs.

Add the beaten eggs and a bit of salt to the pan and cook over low heat until the egg is to your desired level of doneness.

Serve hot and enjoy with some toast.
