Start by preparing the vegetables. Finely dice the onion and garlic. Cut the pumpkin into small-medium pieces and drain the artichokes from their container.

Use a large pan and add some olive oil. Once it's hot add the onion, garlic, and pumpkin. Cook on medium heat for approximately 8-10 minutes, until the pumpkin starts to become tender.

Add the garbanzos, broth, tomato sauce, and some salt. Mix and cook on medium-low heat for 10-12 minutes, until the stew thickens to your liking. In the last 5 minutes of the recipe add the artichokes to the pan.

Serve on two plates and enjoy!
Tips & Tricks
You can use a tablespoon of tomato concentrate instead of tomato sauce.
