Stir Fry Sesame Noodles

In a large pot bring 6 cups of water to a boil, then place the spaghetti noodles in and simmer for approximately 9-10 minutes until they are soft.

While the noodles simmer, slice the carrots and celery into long thin strips.

In a small saucepan, add 1 tsp sesame oil (separate from the 2 TBSP that will be used to make the sauce) and saute the carrots and celery until they begin to soften, but still have a crunchy texture, approximately 6-7 minutes, set these aside.

When the noodles are soft, drain the water off, and return them to the pot, then add the carrots and celery, sesame oil, soy sauce, and rice vinegar in with the noodles and mix well.

Divide the noodle and vegetable stir fry between 2 plates and garnish with the peanuts and sesame seeds.

Pair these noodles with your favorite protein to create a balanced meal.
You could also add in more vegetables such as bean sprouts, water chestnuts, mushrooms, broccoli, or sugar snap peas.
