
Sugar-Free Vegan Chocolate Mousse

Soak the dates. Remove the pits if using unpitted dates.

Peel and cut the sweet potato into small dice. Cook in a pan of boiling water. When tender, strain and use a fork to mash until smooth.

Combine the dates, a little of the date soaking water, and the sweet potato mash in a blender or food processor. Blend until smooth.

Warm the chocolate with the coconut oil in a bowl over a pan of boiling water. When the chocolate melts, add to the date mixture. Blend again and it's done.

Let cool and serve accompanied with cocoa powder, pistachio nuts, fruit, or your favorite topping.
Tips & Tricks
We used sugar-free 70% cocoa dark chocolate.
This mousse also makes a great sponge cake filling or frosting.
