Sweet Potato Dip

Wash the sweet potato and cook in a pot with an abundance of water. Boil the potato for 25-30 minutes. Prick the potato with a toothpick, and if it goes in easily then the sweet potato is ready.

Peel the sweet potatoes once they're done and place in a blender.

Add the garlic cloves, cream cheese, olive oil, lemon juice (1/2 lemon), tahini sauce, pinch of salt and pepper to taste.

Blend all the ingredients until the dip has a creamy texture.

Serve the dip in a deep bowl and decorate with drizzles of olive oil, chopped green onion or parsley.
Tips & Tricks
Serve this dip with crudités or whole wheat sticks.
You can replace the cream cheese with half a cup of liquid cream or 3 tablespoons of greek yogurt.
