Tofu and Sun-Dried Tomato Hamburgers

Preheat the oven to 400°F.

Shred the tofu and place into a colander and press using your hands to eliminate any excess water.

Chop the sun-dried tomatoes (now rehydrated) into small pieces and mix with the tofu. Add the salt, oregano, and the flour and mix well. If you feel that the mixture is too wet and doesn't maintain its shape, add some more flour.

Line a baking sheet with parchment paper and spread some olive oil on it as well. Use a spoon to create the portions for the patties out of the mixture and then give them a round shape. Lightly mash to make a patty shape. Place on the sheet.

Bake for 20 minutes.
Tips & Tricks
You can also add a teaspoon of dried basil, garlic powder, or a bit of black pepper to give it more flavor.
Instead of baking you can make this dish in a pan with a bit of olive oil, cooking for several minutes on each side.
The sun-dried tomatoes can be bought dehydrated and you can rehydrate them yourself, or you can buy them already rehydrated in olive oil.
You can shred the tofu and the sun-dried tomatoes in a food processor.
