Instructions

Wash, peel, and dice the potatoes. Put in a pan with water and bring to a boil. Let cook, around 15 minutes, then prick with a fork to check they are soft, i.e., cooked. Next, drain and mash with a fork until smooth.

Break 1 egg and separate the yolk from the white. Mix the yolk with the mashed potato, together with the tuna drained from the can and a minced clove of garlic. Season with a little salt and pepper and mix thoroughly. Let the mixture cool.

Then shape into balls of whatever size you prefer. Dip the balls in beaten egg and dredge in breadcrumbs. Do this twice for better consistency and texture.

Fry with hot oil in a skillet and drain off the excess oil on paper towels.

Serve immediately. They are delicious hot.
