Chop the turkey breast into cubes and sear them in a pan with olive oil. When they are golden brown on the outside, it's not necessary for them to be cooked on the inside, remove from the heat and set aside. They will be used later.

Add the soy sauce, water, grated ginger, and pepper into a bowl and mix (if you have corn starch, add 1 teaspoon and dissolve, it will help thicken the sauce).

Slice the onion and bell pepper, and chop the zucchini into small cubes. Using the same pan, with some more olive oil, lightly fry the vegetables over medium heat. When they are tender add the turkey and the sauce that you have prepared (soy sauce, water, etc.). Cook over low heat for 10 minutes. After this time, remove from the heat and serve.
Tips & Tricks
You can serve couscous, brown rice, quinoa, orzo, pasta, etc. alongside this dish.
As mentioned in the beginning, if you want your turkey to come out juicy, add 1 teaspoon of corn starch to the sauce mixture. This will help with the consistency of the sauce.
If you are a fan of spicy foods, try adding cayenne to the dish while cooking.
