Instructions

Rehydrate the TVP. To do this, soak in a bowl of water for at least 20 minutes. Then drain.

Preheat oven to 350ºF (top and bottom heat).

While the TVP is soaking, start to prepare the filling. Wash and cut the mushrooms into pieces, or slices. Cut the onion into strips, and wash and slice the green bell pepper.

Put a little olive oil into a large skillet. When hot, add the onion, green bell pepper, and mushrooms. Lightly fry over medium heat for 4–5 minutes, stirring often.

Add the TVP and cook for few more minutes.

Stir in the tomato sauce, mixing well. Let the filling cool a little.

Spread out half a sheet of pie dough and spread the contents of the skillet over it, leaving between 1/2 and 1 inch free on each side. Place the other sheet over the top and seal the edges well by pressing with the tines of a fork.

Bake at 350ºF for 20–25 minutes, until the crust is golden, then take out of the oven.
Tips & Tricks
We use a single sheet of pie dough. We cut it in half and cover the first half with the filling. We then cover the pie with the other half. We press the edges with the tines of a fork to make sure it is tightly sealed all around. But you can use 2 sheets if you prefer. You can easily find premade pie dough. Puff pastry also works well. Nevertheless, it’s always better if you can make the pastry yourself. You can find the recipe at Nooddle.
You can beat an egg and brush a little over the pastry so it turns golden brown.
