Instructions

Peel the carrot and garlic clove.

Cut the carrot, zucchini, onion and garlic into small cubes dice. Heat a little olive oil in a skillet and lightly fry the vegetables over medium heat for 5–6 minutes.

Add the chickpeas and the salt and cumin. Cook for 2–3 minutes more.

Fill the tortillas with the contents of the skillet. Once folded, heat in the skillet one minute on each side and enjoy!

Tips & Tricks

You can finish by adding a handful of cheese to the filling, rolling up the tortillas, and putting them into the hot skillet for a few seconds to melt the cheese.
