Drain the tofu and cut in half lengthwise. Remove the excess water with some paper towels and then cut the tofu into cubes.

Sauté in a pan with some olive oil for 10-15 minutes, until the tofu is golden brown on the outside.

Mix the salad vegetables in a bowl and add the tofu.

Mix the tahini, vinegar, and mustard in a small bowl until it's well combined and creamy. Add to the salad and mix well so that everything is covered by the sauce.

Add more salt if necessary.
