Beef Stir Fry with Eggplant and Spinach

Wash and cut the eggplant and carrot into cubes and chop the clove of garlic.
In a large pan add olive oil and once it's hot, fry the garlic. After a minute, add the cubed eggplant and the carrot. Cook together over medium heat for 10 minutes.
Slice the beef and add it to the pan. Cook over medium heat with the vegetables for 3-4 minutes.
Next, add the spinach. Stir, letting the spinach reduce in volume before adding the soy sauce. Stir fry for several minutes before turning off the heat.
Add the contents of the pan into a bowl or plate before serving.
Tips & Tricks
Add a handful of sliced almonds to the stir fry when you add the beef.
If you don't have soy sauce, you can just use salt.
