Instructions

Start by preparing the vegetables. Peel and cut the onion into strips or small chunks. Peel and cut the carrot into thin rounds. Wash and cut the broccoli into small florets. You can prepare the vegetables with a knife or you can use a food processor, but don’t chop the vegetables too finely.

Heat a little olive oil in a pan. Add the vegetables and fry over medium heat for 7–8 minutes, stirring often. Season with a little salt.

When the vegetables are soft, cover with broth or water, and bring to a boil. Season with a little more salt, reduce the heat to low, and simmer, about 20 minutes.

Then adjust the seasoning with salt if necessary and transfer the soup to a tureen or a large bowl and serve at the table.

Tips & Tricks
