Broccoli and Carrot Soup with Cheddar Cheese

Prepare the vegetables the following way. Slice the onion. Peel and slice the carrot. Wash and cut the broccoli into small florets. Lastly, peel and chop the potatoes into cubes.

Add some olive oil to a pot. Once it's hot lightly fry all the vegetables on medium heat for 7-8 minutes. Add some salt.

Once the vegetables are tender, cover them with water. Add some more salt and let them cook on low heat for approximately 20 minutes.

After this time, taste and add salt if necessary. Pour the soup into a large bowl. You can use a hand blender to blend the vegetables to make them a bit smaller or you can serve as is.

Once served, immediately add cheese on top so it melts with the heat.

You can add more vegetables, such as the ones you have in your fridge in order to make the soup more nutritious.
