Creamy Potato and Carrot Soup

Start by preparing the ingredients. Peel and cut the potatoes into pieces of a desired size. Mince the garlic and onion. Peel and slice the carrot into rounds.

Heat a little olive oil in a pan. Add the onion and garlic and lightly fry for a few minutes over medium heat, stirring regularly and taking care not to burn them.

Next, add the carrots and cook for a couple of minutes, until they start to soften.

Add the potatoes and cover the contents of the pan with the water and milk. Season with a little salt. Cover with a lid, raise the heat a little, and let cook for 20–25 minutes. Then check that the liquid has reduced and is tasty. Adjust the seasoning with salt, if necessary, and let cook a little longer if you prefer a thicker soup.
Tips & Tricks
If you’re on a vegan diet, use plant-based milk.
If you want to thicken the soup even more, use light cream instead of milk.
You can also season the soup with a little pepper before serving.
