Stir-fried Tofu with Mushrooms, Broccoli, and Bell Peppers

Cut the tofu into medium cubes and lightly fry over medium heat in a skillet with a little olive oil, stirring often.

Wash and cut the broccoli into small pieces. Wash and cut the bell pepper, mushrooms, and onion into strips of slices.

Heat a little olive oil in a large skillet or wok (if you have one). When the oil is very hot, add all of the vegetables and fry while stirring constantly. Season with a little salt. When the vegetables are almost as cooked the way you like them (still crunchy, tender, etc.), add the tofu and season with a pinch of salt. Cook for a few more minutes, stirring constantly. Remove from the heat and serve.
Tips & Tricks
Why not make the perfect sauce for your stir-fry? In a bowl, combine 1/2 cup water with 2 tablespoons soy sauce, 2 teaspoons corn starch, and 1/2 teaspoon grated ginger. Mix well and pour the sauce into the skillet or wok with the vegetables and tofu. Cook over medium heat until the sauce is absorbed into the ingredients and thickens a little. It only takes a few minutes for the sauce to reduce down and add a lovely glaze to the vegetables and tofu.
We also recommend adding a handful of cashew nuts to the vegetables as you stir-fry them.
