Tofu Scramble with Mushrooms and Spinach

Place the tofu on top of a paper towel to remove the majority of the water. Cut it into pieces and chop it in your food processor (or with a knife if you don't have a processor) until it is shredded.

Prepare the vegetables. Peel the carrot and cut into medium size pieces. Wash the spinach. Wash the mushrooms and chop, along with the onion.

Finely chop the vegetables in the food processor. It's preferred that you chop the vegetables altogether minus the spinach. Next, the spinach (since there is so much of it, you may have to do it in steps).

Add some olive oil into a pan. Once hot add the chopped vegetables and sauté for 6-8 minutes, or until tender.

After this time add the tofu and add a bit of soy sauce and the peanuts. Cook for 2-3 minutes. Presto!
