Instructions

Peel and mince the garlic. Wash and cut the spinach into strips. Wash and cut the mushrooms into small pieces.

Heat a little olive oil in a large skillet. Lightly fry the garlic, stirring often.

Add the mushrooms to the skillet and cook over medium heat for 2–3 minutes, stirring often.

Now add the spinach to the skillet and cook for a couple of minutes. It will gradually wilt. Season the contents of the skillet with a little salt and cook everything for a few more minutes.

Preheat the oven to 360ºF.

Transfer the contents of the skillet to an ovenproof dish. Make a well in the center and break the eggs into it. Season with a little salt. Cook in the oven, about 10 minutes, and serve immediately.

We cooked the eggs in the oven because it's a healthier way, but there are many other options. You can boil the eggs and then slice or chop them up and arrange them on top of the vegetables. You can also fry them in a skillet. Cook the eggs any way you like.
