Vegetable Sauté with Eggs and Potatoes

Cut the bell peppers, mushrooms, and onions into medium size pieces.
Peel the potato and cut into small cubes.
Add some oil to a pan and once it's hot add the vegetables and the potatoes you have just cut. Add some salt and cook on medium heat for 10-12 minutes, until tender.
Meanwhile, put water to boil in a pot. Once it starts boiling add the eggs and cook for 6 minutes. After this time, remove, place in an ice bath, and peel.
Place the vegetables and the potato on a plate with the egg on top. Use a knife to cut the egg and enjoy!
Tips & Tricks
You can add any other vegetables such as zucchini, asparagus, eggplant, etc.
