Peas and Mushrooms with Mashed Potato

Wash, peel, and cook the potatoes in a pan of boiling water with 1/2 teaspoon salt. Cut the potatoes into chunks for faster cooking. When soft, drain and mash well with a fork.

While the potatoes are cooking, prepare the other ingredients. Mince the onion. Wash and cut the mushrooms into pieces. Drain the peas and rinse under running water.

Heat a little olive oil in a large skillet. Add the onion and lightly fry over medium heat for 1 minute, stirring often. Then add the mushrooms and peas and season with a little salt. Cook over medium heat for 5–7 minutes until the vegetables soften and the peas color a little and are infused with the flavor of the other vegetables.

Arrange a serving of mashed potato on one side of a plate or bowl and the sautéed peas and mushrooms on the other. Enjoy!
