Instructions

Mince the onion. Wash and cut the bell pepper in strips. Peel the potatoes and cut into small dice.

Lay the chicken breast on a cutting board, cut into strips or bite-size cubes, and season with a little salt.

Heat several tablespoons of olive oil in a skillet. Add the chicken and fry until lightly colored, stirring often. Next, add the onion and red bell pepper and continue to cook together with the chicken for 2–3 more minutes. Transfer to a plate and set aside.

Put a little more olive oil into the same skillet, if needed, and add the diced potato. When the potatoes are almost cooked (this should take 5-6 minutes), add the chicken, onion, and bell peppers to the skillet. Cook for a few more minutes and then turn off the heat.

Serve the contents of the skillet on a plate. Feel free to sprinkle a handful of various seeds and nuts (sesame seeds, cashew nuts, sunflower seeds, etc.) over the top.
Tips & Tricks
When you dice the potatoes, it’s important to make the pieces small. If they’re too large they will need more time to cook through.
You can season the dish with a little soy sauce.
