Broccoli, Chicken, and Sweet Potato Sauté
“This dish is going to amaze you. Why you ask? Well, for starters, you can eat this as a main dish, use it as a filling for burritos, or pair it with pasta and make a delicious cold pasta salad. It's versatile and works wonders!”
Wash the broccoli and cut it into florets. Peel and cut the sweet potato into cubes.
Heat up a pot with water, and when it begins to boil add the cubed sweet potato. After approximately 10 minutes they should be tender. Be careful when taking them out of the pot, and let them cool down.
Using the same hot water (the water you cooked your sweet potato in) add the broccoli florets for about 4 minutes. After this time, remove them.
In a pan add some olive oil and when it's hot begin to lightly fry the chopped onion.
Add the cubed chicken to the pan and sauté until it's golden brown.
Add the sweet potato and broccoli to the pan with a pinch or two of salt (as desired) and cook for a couple more minutes (until all of the flavors have blended). After you have achieved this, you're ready to serve!
