If you don’t have any cooked rice in your fridge, start by making the rice. To do this, put a tablespoon of olive oil into a pan and heat. Then slice up a garlic clove and add. When the garlic starts to color, add the rice. Stir for a couple of minutes and then add 2 cups hot water and 1 teaspoon salt. Cook over high heat for 7 minutes, then reduce and simmer for 8 more minutes. If the rice has absorbed all the water in this time but is still hard, add a little more water. Let stand for a few minutes.Mince the onion and cut the bell pepper into strips.Put the chicken breast on a cutting board and slice into smallish cubes. Heat a little olive oil in a skillet and fry the chicken, seasoning with a little salt. When cooked, transfer to a plate and set aside.Add the onion and bell pepper in the same skillet. Lightly fry over medium heat for 4–5 minutes, stirring to make sure they don't burn.Return the chicken to the skillet and add the rice. Stir with a wooden spoon and cook for a couple of minutes more. Serve on plates and enjoy!
Tips & Tricks
Feel free to add a couple of tablespoons of canned corn kernels.You can use soy sauce instead of salt. It adds extra zing.
