Cabbage Salad with Chicken and Pineapple

Place the chicken breast on a cutting board and dice. Add to a pan with some hot olive oil, and cook until it browns and cooks all the way through. Once ready remove from the heat and let it cool.

Prepare the vegetables and the fruit. Slice the cabbage into thin strips. Peel the carrot and grate. Lastly, cut the pineapple into medium size cubes. Add all of the vegetables and fruit into a salad bowl.

Add the cooked chicken, mayonnaise, and mix well with the other ingredients. Add a bit of black pepper on top and place the salad in the refrigerator to cool for a bit.
Tips & Tricks
You can substitute the mayonnaise for a yogurt sauce. For this mix yogurt, a finely chopped garlic clove, a pinch of salt, and a drizzle of lemon juice in a bowl. Mix these ingredients well.
