Quinoa, Chicken, and Carrot Salad

Wash the quinoa under running water. Bring 2 cups of water to a boil in a pan. Then add the quinoa and cook until the kernels have popped open, about 20 minutes. Remove from the heat, drain, and set aside for later.

Peel and slice the carrots into thin rounds.

Wash and cut or tear up the lettuce leaves.

Lay the chicken breast on a cutting board. Cut into strips or medium cubes and season with a little salt. Heat a little olive oil into a skillet and fry the chicken until cooked on the inside and golden on the outside.

Combine the quinoa with the chicken and carrots in a bowl. Mix well.

Put the lettuce into a salad bowl and add the quinoa, chicken, and carrot mixture. Toss and serve.
