Pancakes with Blueberries and Strawberries

Instructions

In a large bowl, combine the eggs, butter at room temperature, flour, milk, salt, sugar, and dry yeast. Whisk for several minutes to a smooth, lump-free batter.

Melt a little butter in a small skillet and cover well. Then add a small amount of batter and tile the skillet to spread all over the surface.

When the batter is cooked on one side (you’ll see that small bubbles have formed on the surface), use a spatula to flip the pancake and finish cooking. Make as many as you can until all the batter is used up.

Wash the strawberries and blueberries and serve with the pancakes.
Tips & Tricks
We recommend using whole-wheat flour to make the pancakes as it’s much healthier than using refined white flour.
You can drizzle the pancakes with honey or agave syrup, which is much healthier than the typical pancake syrups.
