Wash a lemon, grate the zest, and set aside.

Preheat the oven to 350°F.

Combine the flour, baking powder, and salt in a bowl and mix well with a spoon. Gradually mix in the sugar and room temperature butter until smooth and set the bowl aside.

Beat the 3 eggs in another bowl. Mix in the grated lemon zest and milk.

Pour this mixture into the bowl set aside earlier and mix gently but thoroughly, making sure there are no lumps.

Grease a cake pan or suitable ovenproof dish with butter and pour in the batter. Bake at 350°F, about 30-40 minutes. The cake will be ready when you prick the center with a toothpick and it comes out clean.

Take the cake out of oven and let cool before turning out.
Tips & Tricks
For a lighter and fluffier sponge, add a pinch of baking soda together with the baking powder.
