Start by preparing the rice. For this, add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to color, add the rice. Stir it for a couple of minutes before adding the hot water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit.

While the rice is cooking, finely slice the onion and lightly fry it in a pan with olive oil. Drain and wash the garbanzos. After 3-4 minutes of the onion, add the garbanzos. Cook for a minute.

Add the spices: the cumin, curry, and salt. Cook for 5 minutes over medium heat. Lower the heat if it's too high.

Add 5-6 tablespoons of rice to the pan. Mix the ingredients well, and if available, add 3-4 spearmint leaves. The spearmint adds amazing flavor to the dish.
