Instructions

Add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to lightly brown, add the rice. Stir it for a couple minutes before adding double the amount in water (about 1 cup) with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit.

Dice the onion and zucchini into small pieces. Next, peel and dice the carrot into small pieces too.

Drizzle some olive oil into a pan. Once it's hot add the diced vegetables. After 10-12 minutes, when the vegetables become tender, add the drained garbanzos. Cook together with the vegetables for several more minutes and then add the curry and salt.

Cook for 5 more minutes and then add the rice you had set aside. Mix and integrate well. Let the flavors mix and then serve on two plates.

Tips & Tricks

You can grate fresh ginger and add to the vegetable sauté. It'll give it an amazing added flavor.

You can chop some fresh cilantro and sprinkle it on top of the rice.
