Start by preparing the vegetables. Cut the chicken breast into bite-size pieces. Peel and cut the carrot into small pieces. Mince the onion. Then wash and cut the zucchini into small pieces.

Heat a little olive oil in a large skillet. Lightly fry the chicken, seasoning with a little salt and a pinch of cumin. When the chicken is golden, remove and set aside for later.

Put a little more olive oil into the same skillet and add the onion, carrot, and zucchini. Lightly fry over medium-low heat for 10–12 minutes, stirring often. Season with a sprinkling of salt and a little cumin.

When the vegetables are tender, add the chicken and stir to incorporate. Cook for 1 more minute, remove from the heat, and serve.
Tips & Tricks
We came up with an original presentation by filling two wheat tortillas with the chicken and vegetables, and we also added a little grated cheese. We put them into small glass dishes to make nests. We then put them into the oven heated to 400°C until the tortillas toasted and held their shape. It’s an original and fun way to present this dish.
