Instructions

Wash the zucchini and slice into thin rounds.

Cut the onion and chicken breast into medium strips.

Heat a little oil in a skillet. Then fry the onion for a couple of minutes, stirring often. Add the zucchini slices and season with a pinch of salt. Grate a little lemon zest (two pinches is enough) and add to the skillet. Cook over medium heat for 5–7 minutes, stirring regularly.

In another skillet, fry the chicken strips in a little oil. Season with a pinch of salt and 2 tablespoons lemon juice.

When you see the chicken is cooked, add to the other skillet with the zucchini and carefully stir all the ingredients to incorporate. Serve on a plate, garnishing with a slice of lemon.

Tips & Tricks

You can use the same skillet for the entire recipe. When you’ve finished cooking the onion and zucchini, remove from the heat, transfer the contents to a plate, and set aside. Cook the chicken in the same skillet. There's no need to wash it between steps. Then just add the zucchini and onion previously set aside.
