Zucchini Noodles with Chicken and Almonds

Wash the zucchini and use a mandoline slicer to cut long noodle-shaped strips. If you don’t have a mandoline slicer, use a knife or peeler, although this will take a bit longer.

Put the chicken breast on a cutting board and slice into strips. Season with a little salt.

Heat a little olive oil in a skillet. Mince the garlic and fry in the skillet, stirring often. When the oil has absorbed the flavor of the garlic, add the noodles and lightly fry for 5 minutes, continuing to stir. Season with a pinch of salt and 1/2 teaspoon grated lemon zest. Let cook for a couple of minutes longer, and turn off the heat. Transfer to a plate.

Cook the chicken strips in the same skillet. Just add a little more olive oil, if required, and lightly fry the chicken for a couple of minutes. Now add 1 teaspoon of lemon juice and season with a little salt. Cook until the chicken turns golden and then transfer to the plate.

In the same skillet, toast the almonds and, if you have them, a handful of sesame seeds, for a couple of minutes. When toasted, turn off the heat.

Arrange the zucchini noodles and chicken on a plate for serving. Finish by scattering over with the almonds and sesame seeds as desired.
Tips & Tricks
Feel free to crumble goat cheese over the dish to make it even tastier!
We used raw sliced almonds.
If you have sesame seeds, don’t think twice about adding them for an amazing touch.
