Chicken and Zucchini Couscous

Combine 1 cup water with a little salt and 3 tablespoons olive oil in a pan and place over the heat. Just before coming to a boil, turn off the heat and add the cup of couscous. Let stand until it the couscous softens, and then stir.

Wash and dice the zucchini (if it is very large, just use half). Then cut the onion into strips.

Put a little olive oil into a skillet. Lightly fry the onion and zucchini, stirring often. Season with a pinch of salt.

Dice the chicken breast and fry in another skillet, seasoning with a little salt.

When the chicken is well cooked, add to the skillet with the vegetables. Add the couscous you plan to use and stir with a wooden spoon. Let cook for a couple of minutes longer, and then serve on a plate.
