Instructions

Start by preparing the ingredients the following way. Slice the onion and red cabbage. Wash the carrot and peel.

Place the chicken breast on a cutting board and chop it into cubes. Cook in a pan with a pinch of salt. Set aside once it is cooked.

Add more oil to the same pan used to cook the chicken, and sauté the onion, red cabbage, and carrot over medium heat for 8-10 minutes, stirring occasionally.

Add the chicken breast when the vegetables are tender and sauté together for a couple of minutes. Correct the amount of salt if necessary, and serve.

Tips & Tricks

If you would like to make your sauté more complete, you can serve it with quinoa, rice, couscous, or orzo... You can also make this dish into a filling for corn or flour tortillas, pita bread, etc.

If you'd like to make it saucy you can add some water and a tablespoon of cornstarch (thickening agent).

Adding a handful of raisins and dried blueberries to the dish makes it taste fantastic. It also gives the dish a touch of sweetness.

You can substitute the red cabbage for cabbage.
