Instructions

Wash the quinoa under water. Pour approximately a cup and a half of water into a pot. When the water begins to boil, add the quinoa and a pinch of salt and cook for 20 minutes. Cook until the seeds open. Remove, drain, and set aside.

Place the chicken breast on a cutting board. Cut into cubes or dice about medium size. Add some salt. Drizzle some olive oil into a pan and cook the cubed chicken until they brown on the outside and are fully cooked on the inside. Once they're ready, place on a plate and set aside.

Finely chop the garlic. Wash and slice the leek, dice or slice the red bell pepper, and finally, peel and chop the carrots into small pieces.

Pour some olive oil into the same pan and once it's hot, add the cut vegetables and cook over medium heat for several minutes.

Grate a bit of fresh ginger on top of the vegetables (if you don't have fresh ginger you can use a dry one, the spice) and continue cooking for 4-5 more minutes. Remove from the pan.

Beat the eggs and use the same pan from begore to cook them into an omelet. Once cooked, chop into smaller pieces.

Add the quinoa, vegetables, pieces of omelet and the chicken into a bowl. Mix the ingredients together and add the soy sauce. Mix again and presto! Your special fried quinoa dish is ready to be served.

Tips & Tricks

If you don't want to use soy sauce you can substitute it for salt.
