Carrot and Zucchini with Egg

Wash the zucchini and use a mandoline slicer to cut into long and thin strips. Don’t worry if you don’t have a mandoline because you can cut into dice, sticks... however you like.

Peel and grate the carrots.

Wash and halve the tomatoes.

Heat a little olive oil into a large skillet and lightly cook the zucchini and carrots over medium heat. Season with a little salt. Cook for 4–5 minutes, stirring often.

Cook the eggs the way you like them. You can cook them in the microwave, hard-boil or soft-boil them, or fry them, among others. Please yourself.

Arrange the zucchini and carrots from the skillet on a plate and add the tomatoes, feta cheese cubes, and cooked eggs. Finish by sprinkling over with pepper, and enjoy!
Tips & Tricks
You can replace the feta cheese with any other variety you think might go well with the dish. For instance, goat cheese, mozzarella, fresh cheese, and ricotta all go amazingly well with it.
