Instructions

Peel the carrots and cut the zucchini, carrots, and onion into a small dice.

Add a drizzle of olive oil into a pan and cook the vegetables you have just diced for 10 minutes.

Add the cooked and drained lentils. Mix and cook with the vegetables for several minutes.

Add the curry, cumin, and salt to the pan. Add the milk and mix the ingredients.

Lower the heat and cook for 15 minutes.

Cook the rice for a minute in the microwave. If you don't have microwavable rice you can cook it in a pot (it will take about 20 minutes) like we always do.

Add the cooked rice and mix the ingredients together. Cook for a few more minutes and then serve on two plates.
