Instructions

Peel and chop half a carrot and half an onion. Remove the avocado flesh. Open the lentil container, wash and drain them and set aside.

Add some oil to a pan and fry the onion and carrot over medium heat. After 5 minutes add the lentils and a bit of salt. Sauté everything for 3 minutes. Turn off the heat and remove from the stove.

Add the contents from the pan and 5 tablespoons of rice (you can change the amount of rice depending if you want more or less) to a bowl. If you don't have pre-cooked rice in your fridge, we will explain how to prepare it in the tips and tricks section. Stir so that the ingredients mix well.

To finish, add the avocado chunks you had set aside, and if you'd like, some raisins or dried blueberries on top of the sauté. Serve and enjoy.

Tips & Tricks

We used orzo in the recipe. Orzo is a pasta that is in the shape of rice and cooks in as little as 5 minutes. Why don't you try it? But if you don't have any at home, no worries, you can use rice like we say in the recipe. Don't know how to make rice? We'll explain here how to make it. For this, add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to lightly brown, add the rice. Stir it for a couple of minutes before adding the hot water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit.

Just as we suggested in the recipe, you can add a handful of raisins or dehydrated blueberries to the sauté. The sweet flavors from these raisins or blueberries are a great contrast to the flavors from the sauté, which we're sure you'll love.

You can finish the dish off by sprinkling some fresh ricotta, feta, or any other cheese on top.
