Rice Sauté with Lentils and Pumpkin

If you don't have cooked rice, begin by preparing some. For this, add a tablespoon of olive oil in a pot, and once it is hot, add the sliced clove of garlic. When it begins to color, add the rice. Stir it for a couple of minutes before adding the hot water with a pinch of salt. Cook over high heat for 7 minutes and then turn down the heat to low and cook for 8 more minutes. If in this time, it absorbed all of the water and is still hard, add more water. Let it sit for a little bit.
Chop the onion and pumpkin into small dice.
Add olive oil to a pan and add the diced onion and pumpkin once the oil is hot. Sauté the vegetables over medium heat for 7-8 minutes, until the pumpkin becomes tender.
Drain the lentils and add them to the pan. Gently stir and sauté over low heat for 4-5 minutes. Add a pinch of salt to the ingredients.
Finish by adding the rice and mix with the rest of the contents from the pan. This dish is now ready to be enjoyed.
