Fried Rice with Lentils, Zucchini, and Sweet Potato

Start by cooking the rice. To do this, put a tablespoon of olive oil into a pan and heat. Then slice up a garlic clove and add. When the garlic starts to color, add the rice. Stir for a couple of minutes. Then add the water and 1/2 teaspoon salt. Cook over high heat for 5 minutes, then reduce and simmer for 10 more minutes. If the rice has absorbed all the water in this time but is still hard, add a little more water. Let stand for a short while, covered with a lid.

While the rice is cooking, prepare the other ingredients. Peel and cut the sweet potato into small dice. Wash and cut the zucchini into small dice. Mince the garlic. Finally, open the can of lentils and rinse lightly under running water.

Heat a little olive oil in a large skillet. Then add the garlic and fry, stirring often and taking care not to let it burn. Add the sweet potato and cook over medium heat for 5 minutes, stirring often.

Add the diced zucchini and continue to cook the same way for 5–7 more minute, until the zucchini softens.

Finish by adding the rice and lentils. Season with a pinch of salt, mix well, and fry together for 3–4 more minutes. Then turn off the heat and serve. Enjoy!
Tips & Tricks
If you like spices, ground cumin goes very well with this dish. Add a few pinches while cooking.
